Good for you for starting to garden organically!
Here are 2 suggestions:
1 - Read the book Square Foot Gardening - he has a great technique to gardening that greatly decreases the amount of weeds, and work needed to have a garden
2 - For some of the larger plants, like tomatoes, zuchini, eggplant, etc, you can use landscape fabric on the bed, and just cut a small hole for the place you are putting the plants.
I hope this helps some, there are many others that have lots more experience than me that will probably have other ideas. This is what I have used and it has helped me as I also tend to get behind on weeding...
