
For those whomissed it first time round - here it is again.

Here is the original version of this recipe (which did NOT include =
beans):
MUSHROOM CURRY
1 pound button mushrooms
2 fresh green chillies, seeded
2 tsp ground coriander
1 tsp ground cumin
half tsp chilli powder
2 cloves garlic, crushed
1 onion, cut into wedges
5 fl oz (or 2/3 cup) coconut milk
salt
1 oz (6 tsp) butter or ghee
bay leaves for garnish
Wipe mushrooms and trim stalks, then set aside.
Put chillies, coriander, cumin, chilli powder, coconut milk and salt (to =
taste) in a blender or food processor with a metal blade, and blend =
until smooth.
Melt butter in a pan, add mushrooms and fry for 3-4 minutes until =
golden-brown. Pour on the spicy coconut milk and simmer, uncovered, for =
ten minutes or until mushrooms are tender. Serve hot garnished with bay =
leaves. Serves four.
We tend to use rather less mushrooms, and replace them with tender young =
fava (broad) beans, and we reduce quantities as required for two people. =
Often we actually use quite a lot of the beans, as we do like them.
