BTW - if it's not fully ripe it will have much more bitterness. There's
a sharp decline in bitterness when it reaches that perfect ripeness. Let
them ripen on the tree until they're a firm soft before picking them.
Just barely squeezable but not rock-hard. You should be able to split it
in half and remove the seed with a knife fairly easily then spoon the
flesh out with very little resistance - a firm flesh but not hard. If
that's the way it is and it's bitter and this is the first crop you've
had from this tree, give it another crop to compare it too and if that
one is bitter too even with good growing conditions, you've got a dud
that's destined for the compost pile.

I don't know about avocados, but many plants get bitter when stressed, both
the fruit and the foliage. Inadequate water is a major stressor, so this
might be the only reason for the bad taste. Might not, but it gives a reason
to hope.
