My snaps have bloomed and the blooms have fallen off. Should I deadhead the
stalks (cut the stalk the flowers were on) or leave it? I want to encourage
more blooms.

I did this earlier this year. I saw more blooms, but they weren't as
impressive as the first bloom. As always, your mileage may vary, and
what do you have to lose by trying?

Yes, deadhead and they should branch and give you more blooms. My
experience with snaps is that the taller varieties re-bloom better than
the really dwarf ones.
