Very easy. Most seed catalogs I've seen contain mushroom 'kits'
which contain innoculated compost with KNOWN edible mushroom spores. You
can get kits for a dozen different gourmet varieties including Shitake.
Most mushrooms are grown in STERILE well-composted horse manure.
The manure is either heat or radiation sterilized before innoculating with
mushroom spores.
I've taken store-bought standard white mushrooms and left them out
to mature where the cap spreads and the spores are released. Place several
of these on op of very damp sterilized manure compost for a few days in a
dark closet. Keep the medium damp while the mycellium spreads throughout.
In several weeks you will begin to have a bloom of mushrooms that will
continue until all nutrients in your medium are consumed.
For Shitake (Japanese) mushrooms, you need fresh oak logs.
