
Cerny kuba (Barley with mushrooms)
250 g barley, 500 g fresh or 50 g dried wild mushrooms, 100 g butter, onion,
garlic, caraway seed and salt
Cook barley in water with butter, salt and caraway seed. Soak dried
mushrooms in water for one hour (If using in place of fresh). Discard water.
Saut?? onions and mushrooms. Combine barley with mushrooms, add pressed
garlic, salt, butter. Spoon mixture into a baking dish and brown. In the old
days, families used to eat out of one baking dish which was served with
pickled plums.
2 Cups mushrooms
1 cup barley
1/2 cup duck fat or butter
1/4 teaspoon pepper 1 teaspoon salt
2 cloves garlic
1/4 teaspoon Spanish onion
Cook barley and mushrooms (if dry), each separately. (Do not cook
canned mushrooms.) Mix and add other ingredients. Put into 9 x 13-inch pan
and use 1 1/2 cups of the mushroom juice to pour over the mixture in pan.
Bake slowly 30 minutes at 350 degrees and serve hot.

What us 1/4 teaspoon Spanish onion? Would that really be just a shred
of a yellow onion, or is this a typo? Looks like a yummy combo of
flavors, and I have it all, even the duck fat!

Maybe real Spanish onions were not so easy to come by in CZ so they use them
sparingly?
I copied and pasted but nothing is carved in stone.
I like onions and would probably add more, myself.
Or did you mean what is a Spanish onion?
Pretty much the same as a yellow onion, to me.

No, I understand the Spanish onion part, it;s the quantity that's
amazing. I'd add lots more too. The other recipe version calls for 2
cups of minced garlic (which is probably supposed to be 2 cloves of
minced garlic). I think we are going to have this soon, w/ more than
1/4 tsp onion and less than 2 cups minced garlic!
