We were discussing this a week or so ago and I came across these today in
my recipe file -

APPLE BUTTER

4 medium apples, pared, cored & roughly chopped
1/2 cup water
1/4 cup sugar
1/2 tsp. cinnamon
1/8 tsp. ground allspice
1/8 tsp. ground cloves

In medium saucepan, mix togehter apples, water and sugar. Cook over medium
heat, stirring occasionally, 30 minutes or until apples are soft.

Please one half of apples into blender container. Cover. Blend on low
speed until pureed. Repeat with remaining apples. Return to pan. Stir in
spices. Cook, sitrring occasionally, 20 minutes or until thick. Pour into
bowl and refigerate until chilled. Makes 18 servigs, 1Tbs. each.

Crockpot Applebutter

Apples, cored and sliced
Sugar (amount to taste depending on type of apples used)
Spices to taste: Cinnamon, nutmeg, cloves, allspice
Water or apple juice or cider

Wash, core and slice apples - enough to fill a crockpot or slow cooker.
Add sugar to taste (atleast 1/8th of a cup, more if using tart apples or a
very sweet butter is desired). Add a small amount of liquid (1/2 cup or
so) to get the steaming action going. Cover and cook until apples
disintegrate. Allow to cool. Strain cooked apples through a food mill.
Return applesauce to crockpot or slow cooker. Test sauce for taste...
remember it will become sweeter and spicier as it condenses. Cook sauce
UNCOVERED for several hours until desired consistency is reached. Can be
refrigerated or frozen... if it lasts beyond breakfast. So far I haven't
had any leftovers.

Note: Soak apples first in a solution of baking soda and water. Rinse
well. This helps remove any pesticide residues which may be present on
non-organic apples.

Serve applebutter on microwave bread:

3 C. flour (mix white, wholewheat, oat, etc.)
2 T. Wheat gluten (optional)
1 T. Malt (optional)
1 tsp. salt
1 T. honey
1 T. molasses
1/2 C. water
1 T. Oil
2 tsp. yeast
1/2 C warm water
1 tsp. honey

Dissolve yeast in warm water with 1 tsp honey. Set aside and let rise 5
minutes. Mix together dry ingredients. Stir in yeast mixture. Add honey,
molasses, oil, and as much of the 1/2 C water as needed to make a moist but
not sticky dough. When dough is ready to knead, place a large jar of water
and a microwave-safe baking dish (i.e. bowl, caserole, ceramic or clay pot,
corningware, etc.) in the microwave and heat on high for 5 minutes. Knead
dough while water is heating. When water is hot, place dough in the baking
dish which is still in the microwave and heat on high for 1 minute. Set
timer and allow dough to rise for 20 minutes. When dough has sufficiently
risen, bake on high for 5-7 minutes, depending on thickness of loaf. Bread
is done when the crust springs back when pressed.

All-Day Apple Butter

5 1/2 lb apples, peeled and finely chopped
4 c sguar
3 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp salt

Place apples in a slow cooker. Combine sugar, cinnamon, cloves and
salt; pour over apples and mix well. Cover and cook on high for 1
hour. Reduce heat to low; cover and cook for 9-11 hours or until
thickened and dark brown, stirring occasionally (stir more frequently as
it thickens to prevent sticking). Uncover and cook on low 1 hour
longer. If desired, stir with a wire whisk until smooth. Spoon into
freezer containers, leaving 1/2-inch headspace. Cover and refrigerate
or freeze.
