If you want a reliable mushroom base you can try what I do. I buy the
dried mushrooms - I get mine from Chinatown but you can find different
types almost anywhere. I just put them in my mini food processor and
whiz away. Then when I need the flavour for something I just add a
bit. I also roll beef tenderloin in the mushroom powder then sear in
butter in a cast iron pan and then roast in the oven - get lots of
compliments on that one.
