With stainless or enamel pots, I use sudsing ammonia to get burned stuff
off. Pour in enough to cover the black and brown stuff. For blackened
bottoms, cover the surface with paper towels and soak them with the
sudsing ammonia. Let soak for hours or overnight. The stuff just slides
right off. However, since ammonia stinks and is irritating to eyes and
respiratory tract, you have to seal the pot with plastic wrap or let it
soak outdoors. Works every time--and who doesn't have badly burned-on
stuff with roasting pans? --Donna

Don't use ammonia in an aluminum pan, though. Darkens it right up.
Baking soda and water, brought to a boil and then let stand for a time
loosens a lot of burns up.
I've used bleach, too, to soak out almost every scorch.
